Lanzarote-La Garrotxa-Oregon-Sicily. Gastronomic-volcanic connection

 

The chefs of restaurants in volcanic territories - Kaori (Lanzarote, Canary Islands, Spain), Les Cols (La Garrotxa, Girona, Spain), W Villadorata Country Restaurant (Sicily, Italy) and Nogoduro (Oregon, USA) put together a volcanic dinner menu at Lanzarote's iconic Fariones hotel.

The restaurant in Lanzarote's first tourist hotel (1966), Kaori, in the recently refurbished Fariones Hotel (Puerto del Carmen), was the venue for Worldcanic's first dinner. A meal on a journey among volcanic territories for an understanding and a taste of how volcanoes shape the cooking in their midst.

Next to the swimming pool, amid vegetation and visits to the island of Fuerteventura, the congress-goers were swiftly catered for by the chef cooking on his own turf (Ignacio Hernández) along with Fina Puigdevall and Martina Puigvert (Les Cols**, Olot, Girona), Viviana Varese (W Villadorata Country Restaurant, Noto, Sicily, Italy) and Ryan Roadhouse (Nogoduro, Portland, Oregon, USA), all of whom run restaurants located in volcanic territories which make their mark.

The Kaori chef kicked off with Bangkok Street oyster; raw local fish, kimchi juice and avocado; chili crab, and "Little India" goat kid from Finca de Uga. A trip around the world without leaving Lanzarote, prior to the main courses by Varese -pasta soup with smoked potatoes, basil pesto, pistachios and garlic oil-, Roadhouse -the winter rainbow: oyster with citrus fruits, smoked black cod with burdock and tofu salad- and Puigdevall and Puigvert -sweet onion, sheep's cheese, and breadcrumbs.

Hernández took up the reins again to finish off the meal with a rather appropriate aloe vera "volcano" with banana cream, "bienmesabe" (almond dessert) and brownie crumbs. The wines served with dinner were as follows: Stratvs rosé from Bodega Stratvs, volcanic dry white Malvasía from Bodega Vulcano, carbonic-maceration red from Bodega Bermejo and Stratvs muscatel liqueur, also from Bodega Stratvs.

And so to bed, to dream of volcanoes.
