Lolo Román
Lecturer in culinary state-of-the-art at the Basque Culinary Center
He studied at the BCC, and worked at a number of state-of-the-art restaurants and cutting-edge companies before returning to the centre as a lecturer.
After studying culinary state-of-the-art at the Basque Culinary Center and Business Management at Sheffield Hallam, Canary Islander Lolo Román worked at a number of haute cuisine restaurants (Xarma, Noor, Heart Ibiza, Espai Kru …), and in 2017 he set up his own gastronomy consultancy to work for brands such as Masterchef, Schweppes and Room Mate. These experiences brought him back to the Basque Culinary Center as culinary state-of-the-art lecturer.
Román, who also supports research projects by Harvard Science & Cooking students, was declared best Canary Island Chef in 2018 and won the bronze medal in the Development Ecotrophelia Awards for eco-sustainable food industry products.
