Which Lanzarote ingredient do you prefer?

A quick poll of six Lanzarote chefs or Lanzarote restaurant owners on the new cuisine taking off on the island. Or how to travel around the world on the basis of local volcanic produce.

Some twenty restaurants in the northernmost Canary Island have joined Saborea Lanzarote to "row together and come together for the good of the island”. A union and a task which affect their cooking, all of which are different, but with one common feature: Lanzarote's “conejero” produce. We talked to six of them for a quick idea of what they do, what they think, and what they prefer; to gain an initial oversight of the new Lanzarote cuisine. The questionnaire was answered by the chefs at Brisa Marina, Casa Brígida, Coentro, Isla de lobos, Niño Salvaje and El Risco.

Lanzarote is: Where I decided to live and work. It's my inspiration, my land. As Saramago said: "Lanzarote is not the land I am from, but it is my land".
A Lanzarote product: The sea. I'm not a one-product man. I think the wreckfish is just as good as a courgette.

Do you do any volcanic cooking? Of course. We work with volcanic products supplied by the land, such as onions, sweet potatoes or wine.

Type of cuisine: Fusion cuisine, travelling cuisine.
