From the land to the plate at ÓX
Through two dishes from his restaurant ÓX, Thrainn Freyr Vigfusson will introduce us to the Icelandic pantry, which is strongly influenced by the country's orography and geology.
Examples include geothermal rye bread with butter and smoked dried wild trout, and Icelandic duck liver, blueberries and crispy geothermal rye bread on lava rock.
