Disfrutar's volcanic cuisine
In this demonstration, Disfrutar will reflect on what volcanic cuisine can be.
The first step will be to understand what volcanic cuisine is and what it is based on. From here they will extrapolate this concept to Disfrutar's cuisine, looking for possible similarities.
They will show them our concept sheet, they will talk about tubers, temperature, flame, colour, the marine environment, lava... And so they will take the opportunity to review some of the restaurant's main techniques and concepts: from black vegetables to the use of the flame in traditional cooking, transforming the calçotada into a creative dish that preserves all its essence; or the use of charcoal and "lava" to make a delicious dessert.
